Chocolate Mint Balls

Grain-free, Gluten Free, Vegan & Paleo

With a perfect combination of chocolate and mint but no grains, dairy or refined sugar, these delectable treats are a great alternative to traditional high-calorie chocolate treats.

Oh, and did I mention? These only take 5 minutes to whip up! Just one more reason to whip up a batch of these balls that seem to be half-brownie, half-cookie.

INGREDIENTS:

  • 1 cup walnuts
  • 1 cup pitted dates
  • ⅓ cup cocoa powder
  • 1-1.5 tsp peppermint extract
  • 2 Tbsp almond or cashew milk
  • ⅔ cup unsweetened coconut (+ 2-3 tbsp for coating)

DIRECTIONS:

  1. Pulse walnuts in food processor until minced.
  2. Add dates and pulse again until well mixed.
  3. Add the cocoa, coconut, extract and nut milk; pulse until combined.
  4. Form into 1” balls, pop into the fridge and try not to eat them all at once!

    *NOTE: If you like a little texture to your balls, as in photo 1, don't pulse until silky smooth as in photo 2. ENJOY!
