Sunflower Spinach Salad

INGREDIENTS:

  • ⅓ cup nutritional yeast
  • ⅓ cup water
  • ⅓ cup reduced-sodium soy sauce (I use Bragg’s)
  • ⅓ cup apple cider vinegar
  • 2 cloves fresh garlic
  • ½ cup sunflower oil
  • Raw sunflower seeds
  • Plain baby spinach leaves

DIRECTIONS:

  1. Wash and dry the spinach leaves; set aside in serving bowl.
  2. Blend first 5 ingredients together; slowly add sunflower oil.
  3. Toss spinach with a little dressing and top with sunflower seeds.

*You could add a little sweetener when blending the dressing together, but I don’t find I need it.
