Sunflower Spinach Salad
Sunflower Spinach Salad
INGREDIENTS:
- ⅓ cup nutritional yeast
- ⅓ cup water
- ⅓ cup reduced-sodium soy sauce (I use Bragg’s)
- ⅓ cup apple cider vinegar
- 2 cloves fresh garlic
- ½ cup sunflower oil
- Raw sunflower seeds
- Plain baby spinach leaves
DIRECTIONS:
- Wash and dry the spinach leaves; set aside in serving bowl.
- Blend first 5 ingredients together; slowly add sunflower oil.
- Toss spinach with a little dressing and top with sunflower seeds.
*You could add a little sweetener when blending the dressing together, but I don’t find I need it.
