Five B Salad
Not one, not two, not three…but FIVE super healthy “B” vegetables form the basis of this salad – and it’s the Bomb! Now, granted, not everyone is keen on Beets, or even Broccoli, so use your imagination and substitute if you must. But I say, “Be Brave, Be Bold and eat the Bloomin’ ‘Begetables!”
Makes 8 servings
INGREDIENTS:
- 2 cups fresh Bean sprouts
- 3 cups Broccoli florets
- ½ cup fresh Blueberries
- 1 red Bell pepper, seeded and sliced
- ½ cup Beets, cooked, cooled and diced
- ¾ purple onion, sliced
- 1 cup grape tomatoes
- ½ cup pumpkin seeds, toasted
Dressing:
- 2 tbsp rice vinegar
- ½ cup extra virgin olive oil (or avocado, flaxseed or pumpkin oil)
- 3 cloves garlic (pressed through garlic press)
- 6 tbsp gluten-free tamari (use soy sauce if you can’t find this)
DIRECTIONS:
- In a large bowl, combine all ingredients in the first list.
- Cover and refrigerate if not serving right away.
- When ready to serve, whisk all dressing ingredients and serve on the side.
