Lorraine's Clean Granola

This recipe for granola not only tastes GREAT (and smells amazing as it is cooking),  but it is a much healthier option to store-bought granola. Most commercially-made granola is high in refined sugar and salt, and contains palm oil. This clean recipe contains protein-rich cashews, almonds, pumpkin seeds and sesame seeds, and uses only a small amount of maple syrup and coconut oil. And if that isn't enough reason to convince you to make your own, how about the fact that it is less expensive to make than to buy AND it's not time-consuming. Simply throw your dry ingredients in one bowl, mix the 3 wet ingredients in a separate bowl, then stir together, spread on a pan and bake!

INGREDIENTS:

  • 1/2 cup of raw almonds
  • 1/2 cup of raw cashews
  • 3/4 cup of almond meal, oat flour or coconut flour
  • 1 cup of Gluten Free rolled oats
  • 1/2 cup of dried tart cherries or dried cranberries
  • 1/4 cup of toasted coconut flakes
  • 1/4 cup of pistachios (or walnuts)
  • 1/4 cup of pepitas (unsalted pumpkin seeds)
  • 1/4 cup of sunflower seeds
  • 1 tablespoon of toasted sesame seeds
  • 1 pinch of salt (I used pink Himalayan salt)
  • 1/4 cup of maple syrup
  • 1 tablespoon of vanilla extract
  • 1/3 cup of melted coconut oil

DIRECTIONS:

  1. Preheat your oven to 275 degrees.  Line cookie sheet with parchment.
  2. In a food processor, pulse/blend almonds and cashews (breaking down to roughly chopped).
  3. In large bowl, add chopped nuts, almond meal, oats, dried cherries, coconut, pistachios, pepitas, sunflower seeds, sesame seeds and salt.  Give that a good stir.
  4. Into a smaller bowl or measuring cup, whisk your syrup, vanilla and coconut oil. Toss with the bowl of ingredients.  Stir until everything is coated.
  5. Spread mixture onto baking sheet and bake for 40-44 minutes or until golden.  Then remove and let cool. Once cooled, break up the mixture and store in an airtight container. Enjoy with plain Greek yogurt, low-fat milk or your choice of dairy-free milk alternative. YUMMY!
