3 Ingredient Pancakes

Dairy-free, Grain-free, Paleo

Okay, folks, it doesn’t get any easier than this!

Alright, I’ll be honest – these aren’t the easiest to FLIP, but if you don’t care so much about how it looks on the plate, then these are fantastic.

Super fast. Super easy. Super tasty.

INGREDIENTS:

  • 1 ripe banana
  • 1 egg
  • Handful of blueberries (If using frozen, thaw first)

DIRECTIONS:

  1. Mash the banana well.
  2. Add the egg and beat/mix well.
  3. Lightly spray a heated pan with extra-virgin olive oil (ok, I cheated and didn’t count this as an ingredient)
  4. Pour batter into middle of heated, oiled frying pan and add a sprinkle of fresh blueberries
  5. When ready, use large spatula to flip (it’ll take some practice…I find a very light spray of the same oil on my flipper works well).
  6. Enjoy with or without toppings (I find the sweetness of the banana and the blueberries is enough!)
